You can not see the individual vitamin molecules and also not minerals. They are way too small. You can crystallize the vitamins, however and observe them under polarized light. And this is indeed an interesting thing to do with a microscope.

I just checked the touptek website. If you can install a TWAIN driver for your DSLR camera, then toupview should be able to recognize the camera:

MS-ICE also allows you to input a video (and not overlapping images). The software will then extract individual frames from the video to do the stitching. You make a video as you "scan" the slide, you then do not have to worry about sufficient overlaps.
