I'd be interested as well by how such pictures were taken! I can't get something looking remotely that good with my eyes (well, my microscope's old, it does play a role), let alone with a camera...

"Focus stacking" is used to produce these images. Basically a number of pictures are taken (digitally) at different depths -- to capture the entire depth of field. Then computer software combines these into a single image with amazing depth. You can search "focus stacking" for more information.

There's a lot more, of course, to carefully preparing and lighting specimens and having top quality equipment as well as skill.

I believe picture they are using differential interference contrast (DIC) for the picture.
