Thanks for the kind words mrsonchus. I was actually disapointed with the image but I find them rather attractive for starch grains. Producing these is quite simple. Just slice a potato, brush the "juice" from the fresh cut surface onto a slide with a drop of water and you have them. Under normal brightfield the grains are oval like but as the water dries and under pol lighting the lines appear.

Cool image.
You know you can insert a piece of clear plastic above the polarizer and below the specimen and you will produce some spectacular colors that would enhance the starch grains.
