Hello my name is Tim, I'm starting this hobby with a celestron microscope 100-2000x stereo microscope.

I'm using a celestron microscope with 4, 10, 40, 100 times magnification. Eye pieces are 10 and 20.

Hi Tim,
welcome to the forum!
Your microscope will be a binocular microscope, but probably not stereo (in the sense of 3D-view).

I'm interested in micro organisms and taking pictures of them and learning about them as well.
