I suggest you plant a thick slice of it in [say] a four inch pot and watch it grow.
The stem of the plant makes an interesting microscopical subject.

It needs a fair amount of heat to prosper : mid-20s C. at least. In northern areas, a piece in a 12 inch or larger pot can be grown in a cloche or small weakly ventilated green house to actually produce a lb. or so of good usefull root. You need about 7 months, May to Nov.

I have never actually tried to grow it as a crop [being idle, I just buy it from the supermarket],
