Hello All:
I'm trying to find something for a work surface best for mounting and manipulating specimens. I am thinking about the hard plastic cutting boards which are washable, could be cut on with a scalpel, etc.
This moveable work surface item I would put on my lab table as my lab table's surface is not conducive to working with specimens.
Any other ideas?

I use those thin disposable cutting boards and replace about once a month. They don't stand up to prolonged use but they are light weight, easy to store and don't break my bank.

I have this in use:
My favourite:- piece of planed wood , 10cm x 25cm x 0,8cm
I take notes on it if necessary and from time to time just plane the surface
An 8cm x 12cm planed board on 3cm high feet - makes handling easier sometimes
A sheet of glass 20cm x 25cm - easy to clean
cold cuts plates from porcelain and stainless steel - borders are useful for transporting stain bottles etc.
kitchen trays normal and small
baking dish - good for samples and chemicals bottles - good to store a project in progress
One tip: An assortment of dark and bright surfaces use useful for visibility

Glass would work well if you are dissecting specimens. You can cut on it and it can be cleaned/disinfected easily. I use a rectangle glass plate 3"x6" for anything from cutting on or use in my diatom manipulation and mounting.
