It makes me think that the entire interior of the sphere must be a mirrored surface and that the light source must be precisely centered. A rather pricey item.

It's usually a white diffusing paint. There are some that are built with 7mm thick Teflon PTFE on the inside. Apparently, the calorie count is very very accurate, and it's how those calorie numbers on U.S. food package labels are calibrated. I'm assuming it's not because it's the best tasting:
