Remedy for eyepiece delamination
Some of my old Zeiss eyepieces developed delamination around the edges. The remedy was to open up the eyepiece, accessing the delaminated group, and aplying a bit of immersion oil on the edge. The oil seeps by capilarity into the delaminated space. The oil drop should be located as to seep from one point of the edge, in order not to trap air. Don´t know how long it will be good for, but the ones recovered in 2019 are still ok.

I tried that, it works...sort of. I can definitely see residual defects in the optics that become more obvious with time but still significantly better than before applying the oil. Don't know if sealing the edges with say canada balsam would improve the ever so slightly gradual deterioration of the treated parts.
The ultimate way to fix delaminated eyepieces would be to soak the doublets in hexane and once they separate apply fresh lens cement.

Assuming that you have the equipment/skill to centre the two elements to the original standard.

How would you go about that? Its a topic I'm quite curious about.

The classic way is to use a lathe ... centre one element on a ‘wax chuck’, add warm balsam and the second element, and push it gently into place whilst it’s rotating.
Sounds easy ...
I have no idea what the Zeiss standard of accuracy was.

Well the Germans are known for their engineering standards and attention to details so I imagine fairly tight tolerances.
I can't remember where I saw it but modern high end objectives being assembled by hand using tiny hammers to nudge the lenses and found that rather amazing.
